Last time I typed up a blog about my special kitchen challenge I was on day eleven and had made some butternut squash soup, broccoli and some mac and cheese for Ninja Gurl.  I have been keeping tabs with a notebook by the stove in the kitchen so I thought I would update you since I am on day DAY 22!!!!!!!

Yep, 22 days of making dinner with what I already have in the kitchen.  Remember that Superdad is buying only milk, eggs, bread, apples and the girls lunch stuff for school.  {I have to pack their lunch every day.}

Here's what I've made for the family.

Day 12 – beef sirloin, honey carrots, collards and sliced apples.
Day 13 – {a Friday} eggs, waffles and toast
Day 14 – chicken pot pie
Day 15 – leftovers from all the food in fridge
Day 16 – homemade veggie soup
Day 17 – leftover soup with cornbread
Day 18 – sweet orange chicken and corn
Day 19 – broccoli, black eyed peas and mac and cheese
Day 20 – Girl went on a sleepover so I didn't make dinner.
Day 21 – It was a special treat for Lovely O so we had take-out from Noi's.

Day 22 – {That's today}
I've already looked in the fridge and tonight will be a LEFTOVER feast from everything in the fridge.  Lots of leftovers in there!!

I cannot believe that I've gone 22 days without buying food for dinner!!!  My goal is to go 30, so we shall see.

Starting a new business.  How does one go about that?  Seriously because this is all new to me.  So different from blogging.  Crocheting is not like typing up a blog post every couple of days.

Yet, here I am.

Starting a new business. 

It just sort of happened. 

One day I was telling Superdad that I wished there was something I could do involving something that I enjoy doing and I'm good at doing.  IE:  Crocheting

Then in a few days Wooly Clouds Crocheting was born.

Superdad brought up Wooly and I REALLY liked that!  It goes with my whole theme, the one that was dancing around in my brain.

I started thinking about where we live with the mountains, trees, seasons, blue sky and clouds.

Then it hit me!  LAND OF THE SKY!!  The sky has clouds.  {on certain days there just happen to be more than others.}

Started a Facebook page.

Simple ABC Smoothie with Tart Blenders
Servings: 28-32 ounces

Ingredients:

1 cup ice ¼ cup water

½ ripe banana, peeled
1 orange, peeled and halved
1 cup fresh baby spinach, firmly packed (optional, see note)

Directions:
Add apple, then ice, water, carrot, banana, and orange to pitcher of high-speed electric blender (one suitable for crushing ice and handling firm textures). Blend on high (or use “smoothie” option, if applicable) for approximately 1 minute. (If necessary, stop machine intermittently to scrape down sides or press ingredients down to remove any air pockets that might impede blending.) Pour into glasses and serve immediately.

Tip:
If you want to go “green,” add baby spinach with other ingredients and blend, as directed. OR, transfer half of ABC smoothie to a pitcher; then add spinach to remaining smoothie mix in blender; blend as directed. To serve, fill glasses halfway with green smoothie, then add ABC smoothie to top for a bit of a layered look.

1 jar (6oz) marinated artichoke hearts, drained and coarsely chopped
1 can (15.5oz) chick peas, rinsed and drained
1/2 cup chopped red bell pepper
1/4 cup pitted Kalamata or other olives, coarsely chopped
1/2 cup chopped red onion
1/4 cup chopped fresh parsley
1/2 cup shredded carrots
2 Tbsp chopped fresh basil or oregano, or 1 tsp dried
3 Tbsp capers, drained
Juice of one lemon
4 Tbsp olive oil
2 Tbsp red wine vinegar
Sea salt and freshly ground pepper, to taste

Instructions

Place Wild Planet Wild Albacore Tuna and juices from the cans into a large bowl. Flake with a fork to separate tuna into bite size pieces. Add artichoke hearts, chick peas, red bell pepper, olives, red onion, parsley, carrots, basil or oregano, capers and lemon juice to tuna in bowl. Mix gently to combine all ingredients. In a small bowl, whisk together olive oil and vinegar; season with sea salt and pepper. Pour over tuna salad and stir to combine.

Yep, I'm still doing it.  ELEVEN DAYS!!!  Woot Woot!!!

The Kitchen Challenge where I use what I have in the house for dinner and it's working out well.  I say this because the kids aren't eating cold cereal or popcorn for dinner just yet.  I sat down and wrote down the meals we've had since I last posted about the challenge.

Saturday I don't know what was for dinner because I was already at the hospital and did not make dinner.  I'm sure that Superdad heated up leftovers or scrambled some eggs. 

Sunday it was pizza left over from the birthday party.

Monday I cooked some rice, lamb meatballs and peas.

Tuesday I heated up some pasta with the best Trader Joe's Three Cheese Pasta Sauce that you will ever eat.

We finally ate all the ice cream birthday cake and the regular cake from Ingle's.  Whew, it was a tough job but someone had to do it.  The homemade vegetable soup is gone too as I sent it to my Mamaw's house for her to enjoy and she did!

Last night I heated up come butternut squash soup, cooked some broccoli and made some mac n cheese for a picky seven year old that wouldn't eat the soup.

You'd think my freezer and cabinets would be getting bare but they are not.

Tonight, I'm drawing a blank for dinner but Friday, I think I will make some chicken sausage, honey carrots and collards and for Saturday I will cook this delicious Cordon Bleu Pot Pie that came from the amazing pot place in Madison.  {Or is that Marshall?}  They make the most delicious pot pies that you will eat!  I just wish they were closer to us!  Then Sunday I think will be family dinner day so I will cook a roast from the freezer and make some black eyed peas and some dressing. 

I didn't realize my kitchen was so stocked.

Scouts honor that nothing has come into the house but lunch stuff for the girls, milk, eggs and bread.  You can even ask Superdad because when he goes to the store I will say, “Nope, I'm doing the challenge.”.

Next week will be a surprise for sure!

Happy Birthday Lovely O

Recently we celebrated Lovely O turning 10.

DOUBLE DIGITS!

How did this happen so fast?? 

I want to wish my beautiful amazing daughter Lovely O a wonderful 10th birthday {a few days late but we've had a situation} on the blog.  Over the years I've shared my little family with you and I know you've had many laughs over some on my stories.  It's never dull at our house.  So a decade ago the world was introduced to our amazing beautiful talented little girl.  You've seen her first smile, her first steps, her first vacation, her first day of school, and so many other firsts that I couldn't even begin to make a list because it would take years to complete and by then she would have had a few more birthdays and you've seen how much she is loved by us, her family and her lifelong friends.

It has truly been a blessing having her in our life.  Not a day goes by that I don't look at her and whisper thank you to God for her.  I'm so grateful.

An Eclectic Mix {Just like me}

This week has been extremely busy and I really cannot blog about it because it also involves someone very close to me and she doesn't want me to talk about her on the internet.  {Only because she is older and it's hard to explain to her all about it and such.}  So anyway, this extremely important person in my life has been in the hospital and I have been by her side – staying the night and then running home in the morning to do the mom and wife things and loving animal mom things that I usually do during the day.  {Take a nap, cook dinner, take care of the kids then go back up to the hospital.}

I'd stay up there 24 hours but I am unable to.

So you see, she takes precedence.   She is still in the hospital and I already have my bag packed to spend the night.  I miss my kids and my husband and my animals while I am not here but she is the most important woman in my life and I am not ready for her to go.  I do not know how I will manage without her.  The other day I crawled into her hospital bed and snuggled with her and cried.  I don't like this drying thing.  I know that we cannot live for forever and there are no buts I can add to that.  She just asked that I continue to teach my children about God and for them to live right. 

We have talked about God a lot in the past few days.  So please God, just not now.  I am being selfish by asking but she cannot go yet.  Her work here is not finished.  She has a lot more to teach us.  Thank you. 

Believe it or not BUT I have still been taking notes of the meals I have been making for the Kitchen Challenge.  Woot woot!  I am amazing!!!  We've had:

Over the weekend I went grocery shopping with my Superdad and we hit two grocery stores.  It was just yummy looking at all the organic fruit and veggies!  YUMMY!!!!

When we finally made it home and were putting things up together I realized that I could have probably fed the family with everything that was already in my kitchen.  It would have only taken more planning and preparing but it could have been done.

I arranged things a bit better and took a mental stock of all the food that we had accumulated.

Here starts my personal challenge.  I know that Superdad is on board with this.

I plan to cook from what we have in the kitchen without buying more stuff.  Now, this doesn't included milk, eggs or bread {however I do have two loaves in the freezer} and what we have to get the girls for their school lunches.  Remember since they go to a small private school we have to pack their lunch every day.

{Sandwich meat, cheese, Sunbutter, coconut....}

This morning the girls had scrambled eggs with toast and for dinner I am making chicken apple sausage, brussels sprouts, honey carrots and some beautiful mixed organic fruit.

Things I've recently said {or thought} compiled for you on a Thursday.

I bet women are shaving their legs today.  Oh wait, this is Asheville.  {About it being 75 degrees outside in winter.}

I saw Twlight on Netflix.  Yeah, I watched it.  Team Damon.

How did I get myself into planning the perfect Birthday in 11 days!?!?!?! Lovely O turns ten next week TEN!!!! She picked a place LAST NIGHT so I am trying to arrange it. She picked out a theme so I just ordered it online. Next to order her cake. I think Superdad will be in charge of presents!!!!!! Don't you think that's fair?

I just want to go drool on my pillow!!!!!

Why do the kids think I am supposed to do everything? ?? Oh, that mommy thing. Got it.

Life is too short. I've watch 2.3 seasons of Vampire Diaries then read the synopsis for the rest. Whew. Glad I got that out of my system. It's worth it just to see Ian aka Damon. Fanning myself.

PLEASE Netflix make a season two of Reckless!!! I beg you!!!

Celebrating a Christ-Centered Easter, a new book that focuses on seven different personal experiences with the Lord that took place just before and just after His suffering, sacrifice, and Resurrection.

When I was asked to be part of the blog tour I was excited yet it saddened me.  It made me think about how we celebrated Easter at my house growing up.  I can remember the Easter baskets with candy and plastic eggs but I don't remember there being any talk about Jesus and why we celebrate Easter.  I also remember going to visit family and a big meal was prepared and then the Easter egg hunt took place.  Oh!!!  The frilly Easter dresses.

Now that I am a mother with four children and even a brand new granddaughter {she still has that new baby smell} Easter is pretty much still the same.  A family dinner.  I do the Easter baskets with candy and plastic eggs {for the big egg hunt} but there really isn't any talk about why we celebrate this day.  I can remember one year when I only had two children that the week of Easter I told my children why we celebrate Easter and then on Easter morning I gave them a beautiful biblical card with some sort of Easter message and one big chocolate bunny.  I think they were okay with it BUT then that very same day the woman that was dating {then later married} their dad gave them huge baskets full of so much candy, toys and eggs.  It made me feel bad about myself like I was letting them “miss out” on something.

How appropriate.

For a month now I have been working on a new business that will {hopefully} roll out in the Fall of 2015.  Every few minutes I change my mind and think that some sort of madness took over my body and that there's no way in hell that I could ever start a business and crochet beautiful things that people would actually want to spend money on.

Momentary insanity???

Then a few minutes later I pick up my yarn, feel in run through my fingers and start to crochet thinking that THIS will be beautiful and someone will love it!

So depending on my mood I am starting a business and at times I am not.  However I did buy the domain name and I'm already starting on the website.  Then I did already set up a Pinterest, Twitter and Facebook Page for the new adventure.

Momentary insanity.

Starting a business is completely scary.  Foolish?  IDK

So here it is March 1, 2015 and it's National Crochet Month.

How will you spend it?

I will be crocheting of course.
