Last night I was going through the kitchen trying to find something hot for dinner, some comfort food. I didn't have all the ingredients to make my homemade lasagna but I came up with another recipe that tasted delicious and it was a nice change from the usual meat and cheese lasagna that I usually prepare.
Ingredients, all organic:
Fresh Asparagus, chopped in various sizes, and cooked in butter with garlic
One can roasted tomatoes with onion and garlic
Lasagna Noodles, cooked
Since I cooked everything beforehand it made the dinner super easy because I just had to put it together in layers and heat until cheese was melted on top.
|In deep skillet drizzle olive oil all over pan and spoon some of the tomatoes in pan.|
|Add cooked noodles.|
|Add cooked asparagus.|
|Sprinkle with both cheeses.|
|Add more noodles.|
|Top with rest of tomatoes.|
|Place lid on skillet and heat on medium heat until bubbly.|
