Instead of using rum I use Frangelico for a tasty surprise. I found various recipes online and come up with this one.
* 1/2 cup toasted pecans before chopping, finely chop after cooling
* 1 1/4 cups finely crushed shortbread cookies
* 1/2 cup powdered sugar
* 2 tablespoons cocoa
* 2 tablespoons light corn syrup
* 1/4 cup Frangelico Liqueur
Toast pecans and chop then crush cookies. Add all to a bowl, stir and chill. Roll into small bowls then roll into more powdered sugar. Store in a sealed container in fridge until ready to enjoy.
