Day Twenty – What are you thankful for?

I’m not sure what to blog about today that I am thankful for.  I’ve been in a funk for a couple of days and have been sleeping a lot with Sophie the Superdog.  She’s on three medications and sleeping a lot but doing much better after the vet visit yesterday.  That makes me happy.

Thanksgiving is my favorite holiday of the year; it’s like Christmas without going into debt to buy presents.  We get to enjoy time with our family and eat some amazing food and it’s just awesome for me.  This year we are going to my dad’s house who just lives a few minutes from us.

I’m making my awesome Pineapple Casserole to take per his request and Lil O’s.  Since they love it so much I thought I’d make two of them to take.  One for my daddy and one for Lil O and hopefully they will share them with everyone else.

Now I know what I can be thankful for today.

I’m thankful for loving to cook for my family. 

I enjoy spending time in the kitchen making so many awesome delicious things for my family and friends.  I call myself an amateur chef and I do have fun in the kitchen.  I’m no Eric Ripart but I can hold my own. 

So, today and every other day I’m thankful that I’m able to cook and cook well.

It's yummy! Perfect with ham. It's Pineapple, butter, cheddar cheese and ritz crackers. Bake and voila! People are begging for it.
