What's cooking in your kitchen?

With Fall in the air and the temperature getting into the 50's my body starts to crave the warmth of homemade soup.  Soup is a specialty of mine and never the same twice, it only gets better!

Yesterday I made some TASTY homemade soup and it warmed us right up.  Here's my basic recipe and one of the joys is you can add anything in the fridge or freezer to make a tasty soup for your family.




Homemade Soup

Chicken Stock

3 peeled and cubed sweet potatoes
3 peeled and cubed regular potatoes
4-6 celery sticks, sliced
6-8 carrots, sliced
1 onion, chopped

I threw in some dried pinto beans, frozen lima beans and frozen corn.

Then I sliced some chicken & turkey sausage and added to the stock pot.

Add salt and other assorted spices.

I cooked on medium heat for two hours.

This made a full stock pot of soup so I was able to freeze some and the rest can be for lunch this week.  It was delicious!  Make some biscuits or some cornbread and you have a hearty meal.
