I made this really amazing dinner the other night and I wanted to blog about it. 

I was in no mood to cook so I was looking for an easy dinner.  So, in the fridge I found some leftover roasted sweet potatoes and onions from a previous meal, ham, cheese and eggs. 

Perfect for a quiche. 

The quiche was OUT OF THIS world delicious.  I paired it with a spinach salad and it's all Superdad talked about.

Sweet Potato & Ham Quiche

Here's how I threw it together:

In a big bowl I mixed the leftover sweet potatoes and onion, 3 eggs, a little bit of milk, ham, garlic, salt & pepper and shredded mild cheddar cheese.  Bake at 375 for about 25 minutes or until set.  I don't know measurements because I just threw things in.  I didn't make the crust, I used this awesome organic crust I buy at Earth Fare.  They are delicious, just as good as homemade!  I always keep some in the freezer for a quick pie or quiche. 

Then I was craving chocolate so I whipped up some homemade chocolate brownies.

They were so YUMMY!!!


It was a very therapeutic meal after everything we have been going through.
