A certain anonymous person has commented and emailed about a certain recipe. 

Tex-Mex Lasagna

I found this recipe on the back of the french fried onion canister and have been using it for 10+ years now.

Ingredients:

1 pound ground beef
1 can diced tomatoes, I use the roasted with garlic ones ~ DO NOT DRAIN
1 package taco seasoning mix
1 can french fried onions
12 ounces cottage cheese
2 cups of cheddar cheese
2 eggs, slightly beaten
12 flour tortilla shells

Preheat oven to 350.

Brown meat and drain.  Add the can of tomatoes and taco mix.  Simmer for 5 minutes.

Remove from heat and add 1/2 the can of french fried onions.  Stir.

Combine 1 cup cheddar cheese, container of cottage cheese and the eggs. 

In baking dish overlap 3 shells on bottom and you can arrange 6 around the dish.  (I don't do the 6 around the dish.)  Put all of the meat mixture on bottom, then layer 3 more shells on top of meat.  Pour cheese mixture on top of the shells.  (After that step I layer more shells.)  Cover with foil and bake for 45 minutes.

After it has cooked top with rest of cheddar cheese and french fried onions.  Bake 5 more minutes to melt cheese and brown onions.

Top with sour cream, side of chips and a salad then ENJOY!!!!
