Homemade Muffin Recipe

I reviewed Ratio by Michael Ruhlman months ago. I love this book. I used his muffin recipe found in Ratio.

8 ounces flour
4 ounces sugar
1 teaspoon salt
2 teaspoons baking powder
8 ounces milk
2 large eggs
1 stick melted butter

I added one cut up banana, handful of pecans and 1 teaspoon vanilla.

Threw it all in my stand mixer for a minute or two.  Bake for 20 minutes on 350.  Or until toothpick comes out clean.
