I took a recipe from The Good Home Cookbook and modified it last night to make Stuffed Peppers.

5 pretty peppers cut in half and cleaned out.
1 pound ground sirloin
1 onion, finely chopped
2 garlic cloves, minced
1 can diced tomatoes
2 1/2 cups of rice, cooked

Assorted spices.

2 cups cheese
Assorted veggies

I put the rice in the rice cooker and started cooking the ground sirloin, onion and garlic in a skillet.

After you clean the peppers put them in boiling water for 2-3 minutes then drain. Arrange them in a slightly greased baking dish.

Stuffed Bell Peppers

I wanted to make two kinds. Meat and without meat.

One bowl had meat, rice, diced tomatoes, salt, pepper, parsley and handful of cheese.

Other bowl had rice, tomato juice, salt, pepper, basil, red pepper flakes, dry mustard, parsley, handful of cheese and a couple handfuls of a frozen veggie mix. Peas, carrots and corn.

Stuff peppers.

Top with more cheese.

Bake at 375 for about 20 minutes.

I served with buttered corn on the cob and toasted rolls with butter.

The kids enjoyed putting soy sauce on theirs.

looks great i never thought of cutting the pepper in half i just always left it whole and cut the top out of it and cleaned it out i'll have to try that
