Superdad usually says that when things go his way. Mostly when he finds the perfect parking spot!!! I say perfect as in RIGHT in the front of where we are headed and with a pull through!!! Usually said while doing a hand gesture.

I am feeling inspired lately. We are doing so well compacting and such. I am thrilled. We hit Earth Fare the other day. We usually blow 240.00 there EASILY!!!!! With some planning and more planning I was able to spend 140.00. I only go to the store two times a month for the big SPENDING list. This made me feel awesome. Now, Superdad will venture to Green Life to get milk, bread or anything we run out of. We have our system down very well.

Today he stopped to pick up milk, bread and nuts for granola bars.

Our goal this week is to spend ZERO on food expenses. Our house is quiet capable of feeding us ALL week until my big grocery shopping trip to Earth Fare.

I have sandwich stuff for lunch. Tuna for tuna salad or tuna pasta. I have ham and cheese to make a quiche. I have english muffins for breakfast or open faced sandwiches. Sweet potatoes to bake. I have dried pinto beans I am going to use to make bean burgers. There are various food items that will make a nice addiction to any meal.

Okay, back to compacting. As you know I have been having great success in my granola bar making. I have tried all sorts of various mixtures. I even accidentally made some too sweet so they were "treats". I also accidentally got a batch too dry and the kids turned it into cereal! They loved it with the milk! I will say that Superdad wanted me to try a batch with molasses. We didn't like those so much. I guess I am just not a molasses person.

So, I was inspired yesterday!! Mrs Furious blogged her muffin recipe the other day. I wrote the recipe down and stuck it with my other recipes.

Let me go a step further. My friend Anna has been bringing us Friendship Bread about every week since like Christmas. She tries all sorts of different ingredients for her Friendship Bread. YUMMMM!!!!

Soooo, I was thinking about what sort of muffins I could make with only using what I have in the house. I wanted it to be something "grown up".

So today I made "Friendship Muffins". ~giggle~

Here's the recipe I used, it's actually Mrs F recipe. I just added brown sugar to mine and the various spices. THANK YOU MRS F!

2 cups all purpose flour
6 tablespoons brown sugar
1 egg
1 cup milk
3 tablespoons melted butter
1 tablespoon baking powder
1/2 tsp salt

I mixed the dry ingredients together first. Then I added sweet basil, ground coriander and ground ginger. I don't know the exact amount. I just sort of would shake shake shake. Mix. Smell. Shake shake shake. Mix. Then smell again. It will smell awesome too!

When I thought that was about right I added the melted butter and egg.

I spooned it into greased muffin pan. Sprinkled more brown sugar and some salt on top.

I baked them for 15 minutes in a 400 degree oven.
